Since undertaking my pledge to remove processed food from my diet I can honestly say that I have not once been tempted to eat chocolate or anything sugary. I’m not sure why I have been successful this time when I have spectacularly failed before when attempting to cut out sugar. I would normally get to day 7 or 8, give up and stuff myself full of chocolate.
I am up to day 74 of my 100 day challenge and I am still enjoying myself. My children however still love their chocolate and their sugar. To give them a treat (on my terms 🙂 ) I made them wholemeal chocolate chip cookies today. The chocolate chips are organic 75% dark chocolate pieces that I cut up and I used organic coconut sugar, I also halved the amount of sugar in the recipe. They loved them and had no idea that their treat was a little bit healthier.
Chocolate Chip Cookies
- 125 g butter
- 1/2 cup coconut sugar
- 1/2 teaspoon vanilla
- 1 egg
- 1 3/4 cups atta wholemeal flour
- 1 teaspoon bi carb soda
- 1 cup chocolate chips
Cream butter, sugar and vanilla. Add eggs and whisk until incorporated. Add flour, bi carb and chocolate chip. Mix with a wooden spoon until well combined. Roll tablespoons of mixture into balls and place on a lined baking tray. Bake in a 180 degree oven for 10-15 minutes until golden brown. Enjoy 🙂
