If you have never has crepes before than give these ones a go. You will not regret it 🙂 This dessert is one of my all time favourites. The crepes can be eaten for dessert with fruit or for breakfast on the weekend with fresh berries and maple syrup. Enjoy 🙂
Wholemeal Crepes with Maple Glazed Apples
Crepes
- 3 eggs
- 1 cup wholemeal flour
- 1 cup milk (you can use any milk I used lactose free)
- 3/4 cup water
- 1 tablespoon pure honey
Using a blender or small hand mixer blend ingredients until light and fluffy. Heat a non stick pan over a medium heat. I usually melt 1 teaspoon on butter in the pan and then pipe it around the pan with a piece of paper towel. Pour 3/4 cup of batter into the pan and tilt until crepe covers the base. Allow to cook for 1-2 minutes. Gently lift crepe with a spatula and flip. Cook for 1 minute and then gently remove from pan. If freezing crepes fold and then place in a zip lock bag when cool.
Maple Glazed Apples
- 2 large Granny Smith apples (peeled and diced)
- 1 tablespoon of butter
- 2 tablespoons of maple syrup
- 1 tablespoon of sour cream
Melt butter in a non stick pan. Add apples to pan and stir until evenly coated in butter. Allow apples to fry over a medium heat until softened. Add maple syrup and simmer until slightly reduced. Just before serving stir through sour cream.
