I love crumpets but if you read the label on the back of the commercial version you will see they are full of preservatives and sugar. These crumpets are easy to make and the following recipe is a base so you can add any spices that you would like (cinnamon, ginger etc).
Wholemeal Crumpets
- 2 teaspoons yeast
- 1 1/2 cups warm water
In a glass jug whisk together yeast and water. Allow to sit on the bench until mixture starts to foam (approx 5 minutes)
- 2 cups wholemeal flour
- 1 tablespoon baking powder
- 1 tablespoon maple syrup
- 1/2 teaspoon of salt
Sift flour, salt and baking powder into a large mixing bowl. Pour in yeast mixture and maple syrup. Using an electric mixer beat until smooth and elastic (approx 5 minutes). Place egg rings in a heated large non stick pan and spray with rice bran oil. Spoon batter into rings. Cook for 6-8 minutes or until holes appear in the top and the base is golden. Remove egg rings and flip crumpets. Cook for a further 2 minutes. This mixture makes 10-12 crumpets depending on the size of your egg rings. Serve warm with butter and honey or with mixed berries and maple syrup.
