This recipe is a favourite in my house. My girls love it plain but I love adding chicken and broccoli or for a special treat some streaky bacon that has been pan fried with spring onions.
- 2 cups of wholemeal pasta cooked to packet instructions
- 3 tablespoons butter
- 3 tablespoons wholemeal flour
- 1 1/2 cups of milk
- 1 cup of cheese (2/3 cheddar 1/3 parmesan)
- 1 teaspoon garlic (optional)
- salt and pepper
- 1/4 cup parmesan cheese (topping)
- 1/4 cup wholemeal bread crumbs (topping)
Melt butter in saucepan. Add flour and whisk until well combined. Add salt and pepper. Cook off mixture for 4 – 5 minutes until it starts to darken in colour. Add milk and whisk over high heat until smooth and thickened. Remove from heat and stir through cheese until melted. Add cooked pasta to saucepan and gently combine. I spoon mixture into ramekins for individual portions but you can also use a casserole dish. Sprinkle over mixed parmesan and bread crumbs. Place under grill until cheese melts. Serve with steamed vegetables or salad.
If there are leftovers (this is very rare 🙂 in my house) you can cover the ramekins with plastic wrap and freeze. Enjoy 🙂
