Pancakes are a favourite in our house and these ones are made with wholemeal flour and are free from refined sugar. They are light and fluffy and it is hard to stop at one. Enjoy 🙂
- 1 egg
- 1 1/2 cups of milk (I used lactose free today but any milk is fine)
- 3 tablespoons organic honey
- 2 teaspoons organic vanilla extract
- 2 cups plain wholemeal flour
- 2 teaspoons baking powder
- 1 teaspoon bi carb soda
- 25 g melted butter
Using a whisk or electric hand beater whisk eggs, milk, honey and vanilla until light and fluffy (2-4 minutes). Add sifted flour, baking powder and bi carb soda and whisk until well combined. Using a ladle spoon large portions of mixture into a heated non stick pan. Flip when bubbles appear and allow to cook on other side until golden (usually 1-2 minutes each side). Serve warm with pure maple syrup and your favourite fruit.
