I love toast in the morning for breakfast and this is my favorite recipe. I originally found a wholemeal cinnamon raisin recipe on the 100 Days of Real Food website but tweaked it a little to make it more to my liking. I hope you enjoy it too 🙂
Wholemeal Sultana & Spice Bread (for Bread Maker)
- 3 cups of wholemeal flour
- 2 teaspoons of cinnamon
- 2 teaspoons of mixed spice
- pinch of salt
- 1 cup of warm water
- 2 tablespoons of oil
- 3 tablespoons of pure orange juice
- 1 teaspoon of orange rind (optional)
- 4 tablespoons of honey
- 2 teaspoons of dry active yeast
- 1 cup of sultanas
Follow the instructions for a sweet loaf on your bread maker. I personally mix yeast into the warm water with the honey and whisk. Allow to stand until mixture goes a milky colour and foams slightly. Place all dry ingredients into bread machine. Then add all wet ingredients including yeast. My machine has a compartment that adds the fruit after the second knock down of the dough. If you do not have this it is fine to add from the beginning.
You can make this bread by hand also it just takes a few hours from start to finish. Place all ingredients into a bowl following the same instructions as above. Knead for 10 minutes cover with a damp cloths and allow to rise. Once double in size knock dough back, shape and allow to rise a second time. Bake in a 195 degree oven until it sounds hollow when you “knock”on the top – approximately 35 minutes depending on your oven.
Feel free to add any other fruits or even nuts to this recipe. I have also mixed flours before and used a mixture of wholemeal and spelt.
