If you are looking to add some extra vegetables to your daily intake then these fritters are just the thing. I use the following recipe as a base and add any extra vegetables that I have on hand (mushrooms, carrot, pumpkin or corn). If you don’t have the time to grate the vegetables by hand pop them through your food processor 🙂
- 2 cups of grated Zucchini (2-3 whole zucchini’s)
- 1/2 cup wholemeal self raising flour
- 1/2 cup grated parmesan
- 1 grated red onion
- 1 egg, whisked
- 1 tablespoon milk (extra)
- 1 teaspoon smoked paprika
- 1 tablespoon crushed garlic
Place grated zucchini into a clean dish cloth or piece of muslin. Twist and squeeze to remove excess juice from zucchini (this step if important because if you don’t remove the excess liquid fritters will be soggy in the center). Combine all of the ingredients in a large mixing bowl and stir until well combined. If mixture seems a little dry add the milk. Heat 2 tablespoons of olive oil in a large non stick pan and cook fritters on each side until golden. I usually spoon a 1/4 cup of mixture at a time – this gives your decent sized fritters. Serve with salad and sour cream. These fritters freeze well – if you ever have any leftovers. Enjoy 🙂
